When it comes to endeavour prawns never judge a book by its cover. This prawn species has a light, pale shell however the meat is tender and sweet and can be purchased either cooked or raw. As far as cooking goes Endeavour Prawns are very versatile. Endeavour Prawns present well if shelled, and served inside a seeded avocado with a light vinaigrette or in a tempura batter with chilli jam atop a bed of cubed mango. Sweet flavoured Endeavour prawns are perfectly accompanied by a medium to full bodied white varietal such as Verdelho or Chenin Blanc.  A fruitier white style wine such as a traminer blend would be better to complement the spicy flavours of a tempura dish.
