Fresh squid have a white skin and have a light, subtle taste.  The flesh is firm but they are tender eating. Squid is popular served as deep fried calamari rings. When choosing a wine to complement Squid rings make sure you consider what sauces you use as they can influence your beverage of choice.  Squid rings with tartare sauce are best accompanied by a youthful Riesling however Squid served seared and spicy are better matched with a full-flavoured Chardonnay.
