Whiting is prized for its sweet, delicate flavour. It is a versatile fish that can be prepared numerous ways with frying the most common. Careful handling is required because of its soft and delicate texture. With Whiting having such a delicate flavour, subtle wines with a touch of citrus are best recommended such as South Australian Rieslings or a touch of spicy fruit, such as blends from Western Australia (Traminer, Riesling, Semillon, Chenin Blanc).
